To satisfy a chocolate desire these little bites of heaven hit the spot.
Pistachio/Pomegranate Bars
100 g dark chocolate 70-85%
2 tbsp of almond butter
2 tbsp coconut oil
1 tbsp maple syrup
1/2 cup of pomegranate seeds
1/2 cup pistachios
Prepare a baking tray/ small oven dish by lining with baking paper
Set up a bain marie ( a bowl over gently simmering water ) to melt the chocolate .
Break the chocolate bar into pieces and melt the chocolate.
Once melted add the coconut oil, maple syrup & almond butter to the bowl and mix well. Then add the nuts and fruit.
Once throughly mixed , put the mixture into your prepared lined dish .
Put this in the freezer for 1 hour or overnight to set .
Once set cut into small bite sized chunks .
I like to keep mine in the freezer but you can refrigerate .
Enjoy in moderation
These can be made with any nuts or fruit you are inspired by. I have made these with almonds and cranberries or you can substitute the pomegranate from above with frozen raspberries .
